Green Apple and Cabbage Slaw

Ingredients


2 cup Red cabbage (shredded)
2 cup Green cabbage (shredded)
1 medium Apple (green; spiralized or shredded)
1/2 cup grated Carrots
3 green onion (stem) Green onion (sliced)
2 tbsp Olive Oil, Extra Virgin
2 tbsp Apple cider vinegar
1 tsp Honey (optional; omit for AIP)
1 pinch Salt and pepper (to taste)

Instructions


  1. Combine red and green cabbage, apples, carrots, and green onions together in a bowl.
  2. In a separate bowl, combine the olive oil, vinegar, honey, salt and pepper.
  3. Pour dressing into slaw mixture and combine. Let sit in refrigerator for 30 minutes or more, then serve.

Notes:

Add Healthy Fats

  • You can add walnuts, pecans, hemp hearts, or sunflower seeds for a healthy fat boost.

Storage

  • This salad tastes great after it's had some time to absorb the dressing. You can store leftovers in an airtight container for up to 3 days.
