Ingredients


1 cup chopped Tomato
2 cup Italian Snap Beans (Green or Yellow), Raw (blanched)
1/4 medium Red onion (sliced)
1 clove(s) Garlic (minced)
1 tbsp Extra virgin olive oil
1 pinch Sea salt, fine (or to taste)
1 tbsp Parsley, fresh (chopped)
1 tbsp Sunflower seeds (optional)

Instructions


  • Prepare fresh greens to be blanched by cleaning and removing the stems
  • Bring a pot of salted water to a boil and add the green beans and cook for about 1 minute and remove from heat
  • Strain and place in the fridge to cool
  • In a large mixing bowl, add chopped tomatoes, minced garlic, chopped parsley, red onion and cooled green beans
  • Toss with sea salt and EVOO

 

*optional: to boost nutritional value add sunflower seeds, hemp seeds or pumpkin seeds

* you can also create an ti-inflammatory version by adding spices like cayenne pepper, turmeric with a pinch of black pepper.
