1 dash | Black pepper (to taste) |
2 medium egg | Egg |
1 tsp | Extra virgin olive oil |
1 stalk(s) | Green onion, scallion, ramp (minced, white and green part) |
3 slice(s) | Ham, sliced |
1/4 cup chopped | Zucchini (chopped) |
1. Crack and whisk with eggs in small bowl.
2. Add pesto, 1 tsp. of water, and a sprinkle of fresh pepper and whisk again.
3. In a small skillet, heat olive oil and sauté the chopped zucchini and ham for 2-3 minutes.
4. Add the eggs and cook as desired. Top with green onions.
