1 tbsp Basil pesto (or pesto of choice)
1 tsp Water
1 dash Black pepper (to taste)
1 tsp Extra virgin olive oil
1/4 cup chopped Zucchini (chopped)
3 slice(s) Ham, sliced
1 stalk(s) Green onion (minced, white and green part)


  1. Crack and whisk with eggs in a small bowl.
  2. Add pesto, water, and a sprinkle of fresh pepper and whisk again.
  3. In a small skillet, heat olive oil and sauté the chopped zucchini and ham for 2-3 minutes.
  4. Add the eggs and cook as desired. Top with green onions. Enjoy!
