Green Goddess Tomato-Mozzarella Stalks

8 slice Green tomato (make all slices the same diameter)
4 slice Mozzarella cheese (fresh)
1 tsp Chives (dressing)
1 tsp, leaves Tarragon, fresh (dressing - optional)
1 tsp Parsley, fresh (dressing)
1 tsp Lemon juice (dressing)
1 tbsp White wine vinegar (dressing)
1/2 tsp Anchovy paste (dressing - or more, depending on how much you like anchoves)
2 tbsp Mayonnaise (dressing - full-fat but can use reduced-fat)
1 tbsp Sour cream, light (dressing)
1 pinch Salt (dressing - to taste)
1 dash Black pepper (dressing - to taste)


Slice tomatoes and fresh mozzarella into slices about the same thickness and diameter. (I made slices that were about 1/2 inch thick, with the mozzarella maybe a little thinner than the tomatoes.)

Make stacks with a piece of tomato, a piece of fresh mozzarella, and another piece of tomato, then drizzle about 1 T Green Goddess Dressing over each stack.
