1 cup | Spinach (wet) |

3 tbsp | Coconut oil (wet) |
1 tsp | Baking powder (dry) |
1/2 tsp | Baking soda (dry) |

1 1/2 cup | All-purpose white flour (dry) |
Preheat oven to 350F.
In a blender mix all wet ingredients (except carrots).
In a large bowl, combine dry ingredients, add grated carrots.
Mix wet and dry ingredients (do not overmix, just until the dry is incorporated in).
Scoop mix into silicone muffin cups, Place filled cups into a muffin tin for easy transfer.
Bake for 16-17 minutes, or until toothpick comes out clean. Check at 15 minutes.
