6 potato | Potato (large) |

1. Wash potatoes, onion, and avocado.
2. Use a sharp knife to remove any bad spots on potatoes.
3. Chop potatoes into bite-sized chunks.
4. Put chopped potatoes into large pot and cover with water.
5. Bring potatoes to boil on stovetop on high, then reduce heat and leave pot covered.
6. Boil potatoes just long enough to where they get soft but are still firm and don't fall apart easily.
7. Strain potatoes in colander.
8. Cut avocados in half, remove pits, scoop the ripe green flesh into a large bowl, and mash with spices.
9. Dice green onions into small pieces (scissors work great).
10. Add potatoes and onions and mix together until potatoes are evenly coated with avocado and spice mash.
