Ingredients

1 fillet (170g) Atlantic salmon,wild, boneless
1/2 cup Miso paste (or Lemon Garlic - from Meals that Matter)

Instructions

Preheat oven or grill to 425 degrees. In a small bowl, prepare the marinade.

Arrange 2 large pieces of tin foil in a “T” - the bottom one laying across (horizontal) and the top laying perpendicular. Place the fillet in the centre, and lightly turn up the ends of the foil around the salmon. Drizzle and spread the marinade evenly on top. Wrap salmon fillet with the foil, securing the pouch to prevent the marinade from leaking.

Place the foil wrapped salmon on a large baking sheet and cook for 20 minutes or until the flesh of the fish flakes easily with a fork.

Serve with a side salad, greens, or veggies.

Notes:

To maximize the flavour of the fish, allow the marinade to sit for 30 minutes.

Salmon also grills well on the BBQ.
