Grilled Shrimp & Pineapple Tacos

2 tbsp Butter, unsalted (melted)
1 whole lime(s) Lime juice (fresh)
2 tsp Garlic (minced)
1 tsp Cumin
1/2 tsp Black pepper
1 pinch Kosher salt
454 gm Shrimp, raw (peeled, de-veined)
1/4 cup Cilantro (coriander) (to taste)
8 ring(s) Pineapple
2 medium pepper(s) Jalapeno pepper (seeded, thinly sliced)
1 cup shredded Red cabbage
1 cup Romano cheese (or queso fresco)
8 small tortilla(s) Whole wheat tortilla


  1. In a bowl, mix together melted butter, lime juice, garlic, cumin salt, and pepper. Add the shrimp, stir to coat, and allow to marinate for 10-15 minutes.
  2. Meanwhile, heat the grill or grill-pan over medium-high heat. Add the pineapple slices to the grill and cook until golden, about 3-4 minutes per side. Remove from the grill and set aside. Add the shrimp to the grill pan and cook until opaque, about 2-3 minutes per side, depending on size.
  3. Cut the grilled pineapple rings into chunks. Divide the shrimp and pineapple evenly among the tortillas, top with the jalapeño, cabbage, cheese and cilantro.
  4. Serve immediately and enjoy!


Save Time

  • Use store-bought shredded slaw instead of shredding cabbage.
