Grilled Veggies and Hummus Flatbread

2 ring Red onion
1 medium pepper(s) Red bell pepper (seeded and quartered)
1 eggplant Eggplant (cut into 1/2-inch thick slices)
3 tomato Cherry Tomatoes (halved)
1 tbsp Extra virgin olive oil
1/4 cup Parsley, fresh (chopped)
1 tbsp Extra virgin olive oil
1/8 tsp Himalayan sea salt
1/2 cup Hummus
1 large slice Flatbread 12 inch
4 tsp Feta cheese (optional)


1. Heat a large grill pan over medium-high heat. Brush onion, bell pepper, tomatoes, and eggplant with oil. Add onion, tomatoes and bell pepper to pan; cook 3 minutes on each side or until grill marks appear. Remove from pan. Add eggplant to pan; cook 3 minutes on each side or until grill marks appear. Remove from pan; coarsely chop vegetables.


2. Combine vegetables, remaining oil, parsley, and salt; toss to combine.


3. Spread 1/4 cup hummus over each flatbread, leaving a 1/2-inch border around edges. Divide vegetables over each flatbread; top each serving with 2 tsp cheese (if using) and enjoy!
