Heat the vegetable oil in a large pan over medium heat.
Add the onions and a dash of salt. Cook while stirring frequently, until the onions are soft and translucent.
Add the ground chicken into the pan. Use a spatula to break it into pieces. Cook, stirring frequently, until the ground chicken is cooked and no longer pink.
Mix in the curry powder, another dash of salt, and the black pepper.
Add the cabbage and peas. Cover the pan and allow it to cook for 2-5 minutes until the cabbage softens.
Add in the lime juice. Top with cilantro and green onions.
Notes:
Can substitute ground meat with ground pork, turkey, bison, lamb, chicken, or salmon. For vegetarian/vegan option, can opt for firm tofu or chickpeas instead.
