Ingredients


1 avocado(s) Avocado
1/8 tsp Black pepper (to taste)
1/2 tsp Chili powder (for garnish)
1 tbsp Cilantro (coriander) (chopped)
6 large egg Egg (hard boiled)
1 tbsp Jalapeno pepper (minced)
1/8 tsp Kosher salt (to taste)
3 tsp Lime juice (fresh)
4 ring Red onion (minced, about 1 tsp)
1/8 medium Tomato (diced)

Instructions


1. Boil eggs for approximately 10 minutes. Rinse with cool water and allow to cool. Peel the cooled hard boiled eggs.

2. Cut the eggs in half horizontally, and set the yolks aside.

3. In a bowl, mash the avocado and 2 whole egg yolks; discard the rest.

4. Mix in lime juice, red onion, jalapeño, cilantro, salt and pepper and adjust to taste. Gently fold in tomato.

Serve and enjoy!
