1 1/2 cup Lentils, red, cooked
1/2 cup shredded Red cabbage
2 avocado(s) Avocado
3 fruit Lime
1 tbsp Honey
1 tbsp Fish sauce
1 tbsp Sesame seeds
12 small tortilla(s) Tortilla, corn
1 tbsp Paprika
1 tsp Coriander seed (cilantro) (ground)
1/4 cup Sesame oil (or another vegetable oil of your choice)

Instructions


  1. Place lentils into a sauce pan & fill it with enough water to cover the lentils by about a 1/2 inch or so.  Place onto the stove top over medium to high heat.  OPTIONAL:  Place into a crockpot for 2 hours on LOW.
  2. Sprinkle the smoked paprika, ground coriander seed, salt & pepper into a pan (or crockpot).  
  3. Prep the slaw:  Combine cabbage, avocado chunks.  Add juice from half the lime, honey, fish sauce, sesame seeds, and toss to combine.
  4. Heat tortillas either on the grill or steam them in a microwave.  
  5. Drain the lentils & mash slightly.  It should look slightly meaty.  Divide up onto each taco. Top with slaw, garnish with smoked paprika, or even some radishes or matchstick carrots.
