Ingredients


171 gm Wild Atlantic halibut
1/2 cup Cherry Tomatoes
1/2 cup chopped Carrots
1/4 cup Basil, fresh
2 tbsp Extra virgin olive oil
1/2 medium (5.7cm to 8.3cm dia) Potato, flesh and skin, baked (or yam, optional)

Instructions


Slice cherry tomatoes in half. Finely chop basil leaves, drizzle with olive oil and sprinkle with sea salt to taste. Lay halibut on top.
