The flavors of a fall harvest are found in this simple salad.

Ingredients


2 cup Green leaf lettuce (or spinach, packed)
1 cup Arugula (packed)
2 medium Carrots
1 cup Cherry Tomatoes
4 medium fruit (6cm dia) Tangerine (mandarin), raw
1/4 cup Cranberries (dried)
1/4 cup Pumpkin seeds (pepitas)
1 fruit Lime

Instructions


1.Rinse fresh veggies.

2.Shred carrots.

3.Peel mandarins and divide slices.

4.Combine greens, shredded carrots, cherry tomatoes, and madarin slices in a large salad bowl.

5.Top with dried cranberries, pumpkin seeds, and the juice of one lime.

6.Add lime wedge or slice to garnish.

7.Enjoy!
