How to make the original healthy chickpea cookie dough dip that will shock everyone who tries it!
Ingredients
1 1/2 cup
Chickpeas, canned, drained
(or white beans; drained; rinsed very well)
1/4 tsp
Salt
(plus 1/16 tsp)
1 dash
Baking soda
2 tsp
Vanilla extract, pure
1/4 cup
Almond butter
(or nut/seed butter of choice)
1/4 cup
Almond milk, unsweetened
(*only if needed)
1/4 cup
Honey
(more to taste)
1/3 cup
Dark chocolate chips
(or carob nibs)
3 tbsp
Rolled oats, dry
2 tbsp
Flaxseed meal (ground)
(more or less as needed.)
Instructions
- Add all ingredients (except for chocolate chips) to a good food processor (or blender - I used a vitamix), and process until very smooth.
- Then mix in the chocolate chips. If made correctly and blended long enough, this should have the exact texture of real cookie dough!
- Enjoy by the spoonful, pair with graham crackers or apple chips for a healthy sweet treat!
