Healthy Chilaquiles with an Italian Twist

2 large egg Egg
2 cup chopped Tomato
1 bunch Spinach
1 clove(s) Garlic (minced)
1 tbsp chopped Sweet onion
1 pepper(s) Red chili pepper (also chile or chilli) (minced, or you can use dry c)
1 tbsp Parmesan cheese, shredded (parmigiano reggiano)
1 pinch Sea Salt (or to taste)
2 cup Tortilla chips (organic)


  • in a pan, saute garlic and onion until soft
  • add tomatoes and bring to a simmer, for approximately 5 minutes
  • stir in the spinach and allow to wilt
  • add eggs carefully into the sauce, should be sufficient liquid to poach eggs, add water if necessary
  • let eggs simmer in the sauce until cooked to your liking, i.e. soft or hard centre
  • separate the tortilla chips into two equal portions on two plates
  • carefully scoop out some of the sauce to cover the chips
  • carefully scoop out the egg and place on top of the chips
  • add the remaining sauce to your liking
  • sprinkle some parmigiano reggiano on top of each portion and serve
