1 can (15oz) Chickpeas, canned, low sodium (rinsed and drained; for falafel)
1/4 medium Red onion (roughly chopped; for falafel)
2 clove(s) Garlic (minced; for falafel)
1/4 cup Parsley, fresh (chopped; for falafel)
1 tsp Cumin (ground; for falafel)
1 tsp Coriander, ground (for falafel)
1/2 tsp Harissa Paste (or chili powder; for falafel)
1 tbsp Tahini (for falafel)
2 tbsp Oat flour (for falafel)
2 tbsp Extra virgin olive oil
2 clove(s) Garlic (for garlic aioli)
2 tbsp Mayonnaise, low fat
1 tsp Oat Milk
1 tsp Lemon juice (as needed when blending)
2 medium pita Pita bread, whole-wheat
1 cup Lettuce, romaine (shredded)
1 cup Cucumber (slices)
2 ring Red onion (halved)

Instructions


  1. Rinse and drain the chickpeas and pat dry with a paper towel. 
  2. Add the chickpeas into a food processor, along with the red onion, garlic cloves, parsley, cumin, coriander, harissa paste, tahini, and flour. Pulse to combine. It should not be pureed smooth. Shape into patties with your hands.
  3. Heat oil in a non-stick frying pan, and fry the falafel patties for 3 mins on each side until lightly golden.
  4. While the patties are cooking, make the garlic aioli. Mix the remaining garlic with the mayonnaise, oat milk, and lemon juice and stir to a smooth, creamy sauce.
  5. Cut the pita bread in half and trim one half slightly so that it fits inside the other half to create a more durable pocket.
  6. When the patties are finished cooking, stuff patties into the half-cut pita bread, and top them with shredded lettuce, sliced cucumber, and sliced red onion. Drizzle with the aioli and enjoy!
