For breakfast, just add to yogurt, or eat like cereal. Use your imagination. On the go and need an airport snack to tide you over? This is it!

Ingredients


1 cup Pumpkin seeds (pepitas) (Raw)
1 cup Almonds, raw (Raw and chopped)
1/2 cup Sunflower seeds (Raw)
2 tbsp Lemon peel (zest) (Organic or washed with vinegar water)
1 cup Coconut meat (Shredded or Flaked)
2 cup Rolled oats, dry (Preferably gluten free)
1 tbsp Vanilla extract, pure
1 tsp Sea salt, fine
3/4 cup Maple syrup, pure (Grade B has the most trace minerals)

Instructions


Preheat the oven to 350.  Mix all ingredients together, spread on two parchment covered cookie sheets, and bake for about 15-20 minutes.

Play with other ingredients and add other spices, raisins, etc.  But be careful here!  It's easy to turn something healthy into what would be considered a dessert if you start adding in too much dried fruit or chocolate.
