Healthy Maple Pumpkin Custard

1 can (15oz) Pumpkin purée, canned
1 can(s) (13.5 oz) Coconut milk, sweetened
3 medium egg Egg
1/3 cup Maple syrup, pure
2 tsp Vanilla extract, pure
1 1/2 tsp Pumpkin pie spice
1/2 tsp Sea Salt
1 tbsp Arrowroot flour (or cornstarch)
1 tbsp Coconut oil


Combine wet ingredients.

Mix dry spices with with arrowroot and whisk into wet ingredients.

Pour into ramekins greased with coconut oil. Porcelain or silicone is fine.

Place in a baking pan, fill halfway with warm water and bake 350°F for 50-60 minutes.

Let cool on a rack. Serve warm or chilled. Tastes like pumpkin pie filling but BETTER!!!
