This stuffed French toast with banana and peanut butter is loaded with healthy fat and protein, and is absolutely delicious!
Ingredients
4 slice
Whole wheat bread
(gluten-free, if necessary)
2 tbsp
Peanut butter, natural
1 small
Banana (s)
(thinly sliced)
1/4 cup
Milk, fat-free (skimmed)
(or milk of choice)
1 large
Egg
1/2 tsp
Vanilla extract, pure
1/2 tsp
Cinnamon
1/4 tsp
Sea Salt
1 tsp
Canola oil
(for pan)
4 tbsp
Greek yogurt, plain, fat-free
(for topping)
3/4 cup slices
Strawberries
(for topping)
2 tsp
Maple syrup, pure
(for topping)
Instructions
Spread peanut butter on one side of each slice of bread. Evenly distribute the banana on two of the buttered slices of bread, then place the other slice on top to create a sandwich. Each sandwich should have about 1 tablespoon of peanut butter and half a banana worth of slices.
Whisk together the milk, egg, vanilla, cinnamon, and salt in a container large enough to soak the sandwiches. One at a time, soak sandwiches on both sides until they are nice and moist — about 10 seconds on each side.
Preheat a non-stick skillet on medium-high heat. Coat with oil to prevent toast from sticking.
Place sandwich in pan and cook for 4-5 minutes until the bottom side is golden brown. Flip the sandwich, press on the sandwich with your spatula, and cook for another 4-5 minutes. Remove from the pan and repeat the process with the second sandwich.
Serve each sandwich with a dollop of Greek yogurt, fresh strawberries, and a drizzle of maple syrup.
