1 cup Rolled oats, dry (gluten-free, if necessary)
3/4 cup Spelt flour (or gluten-free alternative, if necessary)
1/4 cup Flaxseed meal (ground)
1 tsp Baking powder, gluten-free
1 tsp Baking soda
1 pinch Salt
1 dash Cinnamon
1/2 cup Almond milk, unsweetened (or plant-based milk of choice)
1/2 cup Applesauce, unsweetened (or any fruit puree)
1/4 cup Maple syrup
1/4 cup Coconut oil (melted)
1 cup Blueberries (fresh)
1/2 cup Dark chocolate chips, vegan (optional)


  1. Preheat oven to 375 degrees F and prepare a muffin tray with spray oil or line with muffin cups.
  2. In a large bowl, mix together oats, spelt flour, ground flax seeds, baking powder. baking soda, salt and cinnamon.
  3. In a separate bowl, whisk together the almond milk, applesauce, maple syrup, and coconut oil.
  4. Gradually add the wet ingredients to the dry ingredients, stirring to combine.
  5. Add in blueberries and chocolate chips.
  6. Divide the batter between the muffin tins and bake for 12-15 minutes.
  7. Remove from oven and allow to cool before serving.
