2 cup All-purpose white flour
1 cup Greek yogurt, plain, 5% M.F., Liberte
2 large egg Egg
1 tsp Baking powder
1 cup, shredded Cheddar cheese
1 cup Olive oil
1/2 cup chopped Olives
2 cup chopped Zucchini


Sift flour and baking powder into a large bowl.

Whisk all the liquids together (eggs, oil and yoghurt.)

Tip everything (liquids, zucchini, olives, cheese) into the large bowl.

FOLD. Don’t over mix. You want lumpy bumpy mix. If it looks a little dry, add a splash of milk. But only a splash.

Put in your muffin tin.

Bake at 200°C (400°F) for 20 minutes.
