Instructions
Heat oil in a large skillet on medium heat, then add the onion, celery, carrots, red pepper, mushrooms and garlic. Cook for 5 minutes or so, stirring so nothing sticks.
Add the rice, water, pinch of salt and pepper. Stir well and bring to a boil. Reduce heat to a lower simmer and cover the skillet for about 20-25 minutes, or until most of the water is absorbed.
Add in the snow peas, broccoli, spinach, kale and shrimp. Stir in with the rice and remove from the heat. Let stand covered for 10 minutes ( veggies will cook during standing time). Fluff with a fork and serve.
