|1 cup||Parsley, fresh|
|1/2 cup||Mint, fresh|
|1/4 tsp||Sea salt|
|2 tomato||Roma tomatoes (diced, or 5 cherry tomatoes)|
|1/2 cup hulled||Hemp seeds, shelled|
|2 tbsp||Extra virgin olive oil|
|2 tbsp||Lemon juice|
1. Process the parsley, mint, garlic and sea salt in a food processor until minced.
2. Transfer the herbs and salt to a large mixing bowl.
3. Add the tomatoes, hemp seeds, olive oil and lemon juice. Mix well and serve.
Serve with - a lemon seasoned chicken breast or any other protein of choice!
