2 medium slice Bacon (thick-sliced; diced)
2 tbsp Shallots (minced)
1/4 cup Apple juice (frozen; concentrate, thawed)
1/4 cup Olive Oil, Extra Virgin (extra-virgin)
1 tsp Honey mustard (prepared)
1/4 tsp Cinnamon (ground)
1 pinch Salt and pepper (to taste)
142 gm Mixed Salad Greens ((5 oz.))
1 medium Apple (Braeburn; thinly sliced)
1/2 cup Pecans (toasted)
1/4 cup Roquefort (blue) cheese (crumbled)

Instructions


  1. Cook bacon in a skillet until crisp; drain on a paper-towel-lined plate. Pour off all but 1 Tbsp. drippings from skillet.
  2. Sauté shallots in drippings until soft, about 1 minute. Whisk in apple juice concentrate, oil, mustard, and cinnamon; season with salt and pepper. Remove the skillet from heat; let the dressing cool slightly.
  3. Toss together greens, apple, pecans, blue cheese, and bacon. Drizzle the dressing over the salad and toss to coat. Serve salad immediately.
