2 cup Cherry Tomatoes (halved)
3 cucumber(s) Cucumber (chopped into medium chunks)
1 medium pepper(s) Yellow bell pepper (seeded and cut into chunks)
1 ml Red onion (diced)
1 medium pepper(s) Jalapeno pepper (seeded and chopped finely)
1 clove(s) Garlic (chopped finely)
1/2 cup Cilantro (coriander) (chopped finely)
2 avocado(s) Avocado (pittend and cut into chunks)
1 whole lime(s) Lime peel (zest)
1/3 cup Lime juice (fresh)
1/4 cup Extra virgin olive oil
1 tsp Sea Salt
1/2 tsp Black pepper
1 dash Cayenne pepper


In a large bowl, combine the tomatoes, cucumbers, bell pepper, red onion, avocado, jalapeno, garlic, and cilantro. Mix together, then add the avocado and fold gently to combine.

Zest one lime into the bowl.

In a measuring cup, combine the fresh lime juice, olive oil, salt, black pepper and cayenne pepper. Mix and pour over the veggies. Toss gently to coat.
