Ingredients


1/2 cup Coconut oil (+ additional for greasing pan)
3 cup Rolled oats- Gluten Free
2 cup Coconut, shredded (unsweetened)
1/2 cup Pumpkin seeds (pepitas)
2 cup Almonds, raw (sliced)
1/2 cup Honey, raw
1 cup Cranberries, dried
1 cup Apricot, dried (chopped)

Instructions


Preheat oven to 350°F (180°C). Grease sheet pan with coconut oil.

In a large bowl , toss together oats, coconut, almonds, pumpkin seeds, and honey. 

Spread granola on sheet pan. Bake, stirring occasionally, until golden brown, 30-45 minutes, watching carefully not to burn. Remove granola from oven and let cool. Stir in cranberries and apricots. Transfer to airtight  storage container.
