1/2 cup | Coconut oil (+ additional for greasing pan) |
3 cup | Rolled oats- Gluten Free |
2 cup | Coconut, shredded (unsweetened) |
1/2 cup | Pumpkin seeds (pepitas) |
2 cup | Almonds, raw (sliced) |
1/2 cup | Honey, raw |
1 cup | Cranberries, dried |
1 cup | Apricot, dried (chopped) |
Preheat oven to 350°F (180°C). Grease sheet pan with coconut oil.
In a large bowl , toss together oats, coconut, almonds, pumpkin seeds, and honey.
Spread granola on sheet pan. Bake, stirring occasionally, until golden brown, 30-45 minutes, watching carefully not to burn. Remove granola from oven and let cool. Stir in cranberries and apricots. Transfer to airtight storage container.
