Homemade Granola

Hearty granola to add to yogurt, pancakes, or as a snack on it's own.

Ingredients


4 cup Oats, dry
3/4 tsp Kosher salt
1/2 tsp Cinnamon
1/2 cup Extra virgin olive oil
1/2 cup Honey, raw
1 tsp Vanilla extract, pure
2 tbsp Flaxseeds
114 gm Raisins, seedless (sultana)

Instructions


1. Preheat oven to 350 degrees F. Line a large, rimmed baking sheet with parchment paper.

2. In a large mixing bowl, combine the oats, salt, cinnamon, flax seeds, and raisins. Stir to blend.

3. Mix in olive oil, honey, and vanilla. Stirring until all oats are lightly coated. 

4. Pour granola onto the prepared baking sheet using a large spoon to spread into an even layer.

5. Bake until lightly golden brown, approx.. 21-25 minutes. Stir halfway through. 

6. Granola will crisp more as it cools. Let it cool completely, undisturbed (at least 45 min.) 

7. Store granola in an airtight container at room temperature for 1-2 weeks, or in a sealed freezer bag in the freezer for up to 3 months.

Notes:

* 1/3 cup is one serving

* Raisins can freeze solid. So if eating from the freezer, allow 5-10 minutes before serving.
