3 medium White onion (peeled and cut into 2-inch pieces)
6 medium stalk(s) Celery (diced)
3 potato Yukon Gold potato (peeled and diced)
3 large pepper(s) Red bell pepper (seeded and diced)
3 large pepper(s) Yellow bell pepper (seeded and diced)
3 large pepper(s) Orange bell pepper (seeded and diced)
3 large pepper(s) Green bell pepper (seeded and diced)
3 large Carrots (peeled and diced)
10 clove(s) Garlic (peeled and sliced)
1 bunch Parsley, fresh


  1. Using a food dehydrator, dry all vegetables for 24 hours. To use an oven, bake for 4 1/2 to 5 hours at 175°F.
  2. Remove from oven and let cool completely.
  3. Using a grinder, process all vegetables into as fine a powder as you like.


You can use this mix on any dish you like -- soups, rice, potatoes, stews, meats, vegetables.
