Honey Lime Quinoa Fruit Salad

This is a refreshing snack packed with antioxidants and fiber!

Ingredients


1 cup Quinoa, uncooked
1 1/2 cup slices Strawberries
1 cup Blackberries
1 cup Blueberries
1 mango Mango (diced)
1/4 cup Honey (for glaze)
2 tbsp Lime juice (fresh) (for glaze)
1 tbsp Basil, fresh (for garnish)

Instructions


1. Rinse and prepare the quinoa according to package. Let quinoa cool to room temperature.

2. In a large bowl, combine quinoa, strawberries, blueberries, and mango.

To make the glaze

  • In a small bowl combine the honey and lime juice.
  • Drizzle over the fruit salad and toss to coat. Garnish with fresh basil.

Notes:

No Mango - add grapes, peaches, plums or apples
