Honey Lime Quinoa Fruit Salad

This is a refreshing snack packed with antioxidants and fiber!

Ingredients


1 cup Quinoa, uncooked
1 1/2 cup slices Strawberries
1 cup Blackberries
1 cup Blueberries
1 mango Mango (diced)
1/4 cup Honey (for glaze)
2 tbsp Lime juice (fresh) (for glaze)
1 tbsp Basil, fresh (for garnish)

Instructions


  1. Prepare the quinoa according to package directions and allow quinoa to cool down to room temperature. Y
  2. In a large bowl, combine quinoa, strawberries, blueberries, blackberries, and mango.

    For the glaze
  3. In a small bowl combine the honey and lime juice.
  4. Drizzle over the fruit salad and toss to coat. Garnish with fresh basil.

Notes:

No Mango

  • Use grapes, peaches, plums, or apples
