Honey Mustard Roasted Cauliflower with Herb Sauce

1 large head Cauliflower
3 clove(s) Garlic (peeled)
3 tbsp Dijon mustard
1 tbsp Honey, raw
1 pinch Sea Salt (to taste)
1 dash Black pepper (to taste)
1/4 cup Extra virgin olive oil
1/2 cup Parsley, fresh (green herb sauce - finely chopped)
1/2 cup Cilantro (coriander) (green herb sauce - finely chopped)
1/2 tsp Garlic powder (green herb sauce)
1/2 tsp Salt (green herb sauce)
1 tbsp Apple cider vinegar (green herb sauce)
1/3 cup Extra virgin olive oil (green herb sauce)


Make the cauliflower:

  1. Preheat the oven to 425F (218C) and line a baking sheet with parchment paper.
  2. Square off the bottom of the head of cauliflower so that it sits upright; place on the prepared baking sheet. Insert the cloves of garlic into the head of cauliflower.
  3. In a small bowl, stir together mustard, honey, salt and pepper to taste, and olive oil. Brush mixture in a thick layer all over the cauliflower. Roast until dark golden brown all over and tender on the inside, about 45 minutes. A long skewer inserted into the center should pass through easily.

Make the green herb sauce:

  1. To make the sauce, stir together all the sauce ingredients in a small bowl.
  2. Serve the cauliflower warm with the sauce alongside.
