|1/2 cup packed||Brown sugar|
|2 large egg||Egg white (room temperature)|
|3 1/2 cup||Rolled oats, dry|
|1/4 cup||Sunflower oil|
|1 tbsp||Vanilla extract, pure|
Position a rack in the center of the oven, and preheat to 325°F.
Line a rimmed baking sheet with parchment paper or a silicone baking mat.
In a large bowl, whisk together the egg whites, brown sugar, honey, oil, and vanilla extract until smooth.
Add oats, and stir to coat evenly.
Spread mixture onto prepared sheet in an even layer.
Bake for about 20 minutes, or until golden and fragrant, stirring once or twice.
Rotate pan 180°F halfway through baking to prevent burning.
Transfer baking sheet to a wire rack, and let granola cool on the sheet.
To get nice, big clusters, let the granola cool completely in one mass before breaking it into chunks.
Store in an airtight container.
If you like, add your favorite nuts and seeds during the last 5 minutes of baking.
