6 cup Lettuce, spring mix (mesclun) (prewashed)
1 cup grated Carrots (shredded)
1 cup shredded Red cabbage (or raddichio)
1/2 tbsp Olive Oil, Extra Virgin
1 tbsp Balsamic vinegar (or lemon juice)
1 dash Black pepper (freshly ground, to taste)


  1. In a large bowl, add your spring mix, shredded carrots and cabbage. Gently toss to mix.
  2. Divide up the servings into plates or containers for later.
  3. Once you are ready to enjoy it, add olive oil, balsamic and freshly cracked black pepper.
  4. Enjoy! This super simple salad is meant to be just that - simple!
