Hummus, Beet & Feta Wrap

2 cup Arugula (roughly chopped)
1/2 beet(s) Beets, raw (grated)
2 tbsp Feta cheese, low fat
3 tbsp Hummus
1 large tortilla(s) Whole wheat tortilla


  1. Spread hummus on the tortilla, leaving a 1 1/2-inch border.
  2. Sprinkle evenly with beets, feta and arugula. 
  3. To roll up, fold in 2 opposite sides of tortilla and roll, starting with the end closest to you. Slice the wrap in half on the diagonal. 
  4. Wrap tightly in foil or parchment paper and refrigerate in an airtight container or zip-top bag.
