Health Highlights

Ingredients

3 medium Carrots (chopped into slices)
3 medium stalk(s) Celery (chopped into slices)
1 small Red onion (chopped into slices)
2 tbsp Coconut oil
4 clove(s) Garlic (crushed)
10 cup Bone broth, Organic
1 can (15oz) Black beans, canned (any mixed beans will work)
1 tbsp Turmeric, ground
1 tsp Ground cloves
1 tsp Oregano, dried
2 cup Pasta, macaroni, elbow, dry

Instructions

STEP 1: In a soup pot, add coconut oil and sauté the first 5 ingredients until it becomes fragrant, about 5 to 7 minutes.

STEP 2: Add the bone broth, beans, turmeric, ground cloves, oregano leaves and bring to a boil.

STEP 3: Reduce heat and cook for 7 minutes.

STEP 4: Next add the pasta and cook for another 8 minutes.

Notes:

For kids, this soup can easily be deconstructed and served as finger foods if they don't like the idea of eating soup.  You can strain the pasta out and serve those or even pick out the beans and serve those separately as well.  At least they are nice and soaked with the healthy juices of the soup broth.

You can also have them drink the soup liquid out of the bowl.  Because it's interesting, sometimes they are more inclined to do it because it's unusual and fun!
