(about 5 large or any other dark leafy greens)

Instructions
- Heat the oil in a large heavy frying pan over medium heat.
- Add garlic onion and spices; sauté 3 - 4 minutes, or until onion softens.
- Add carrots and sauté 3 - 4 minutes, or until carrots are starting to soften.
- Add mushrooms; sauté 2 - 3 minutes, until mushrooms soften.
- Add leeks and sauté 3 - 4 minutes, or until leeks soften.
- Add the broth and bring to a simmer.
- Add the lemon juice, lemon zest, thyme, parsley and kale.
- Reduce heat to low-medium and simmer the soup for 10 minutes, until greens are very wilted. Adjust seasoning.
