1/2 cup chopped Carrots
1/2 cup diced Celery
3 clove(s) Garlic (minced)
454 gm Lentils, raw
1/2 cup Romano cheese (for garnish)
1 cup chopped Tomato
1 medium Yellow onion (chopped)


In large pot, place all ingredients except tomatoes and cheese with 8 cups water, fresh parsley, fennel, and salt and pepper to taste. Simmer, covered, 1 hour. Add tomatoes and simmer 1 hour more.

Garnish with cheese and serve.
