This hearty Italian Tortellini Soup recipe is made with ground turkey, cannellini beans, cheese tortellini, and veggies in a warm tomato broth.

Instructions
- Heat a frying pan over medium-high heat. Add the ground turkey and cook until no longer pink.
- Meanwhile, olive oil in a large stockpot and add diced onion. Saute until onions are beginning to soften; 3-4 minutes.
- Add the garlic, zucchini, and mushrooms to the stockpot and continue to saute until vegetables begin to soften; 3-4 minutes.
- Transfer the cooked ground turkey to the stockpot and add the drained and rinsed cannellini beans.
- Stir in the crushed tomatoes, chicken broth, Italian seasoning. Bring to a boil, cover, and reduce heat to low. Simmer for about 20 minutes.
- Add tortellini and spinach and simmer for about 5-10 minutes, or until pasta is tender.
- Garnish with a sprinkle of shredded Parmesan,
Notes:
If vegan:
- Omit the ground turkey and double up on the cannellini beans, or add an additional can of beans of your choice.
- Replace the chicken stock with vegetable broth.
- Swap out the Parmesan cheese for your favorite dairy-free alternative.
If gluten-free:
- Use a gluten-free pasta option.
