Italian Tortellini Soup

This hearty Italian Tortellini Soup recipe is made with ground turkey, cannellini beans, cheese tortellini, and veggies in a warm tomato broth.

Ingredients


454 gm Ground turkey, lean (ground)
1 tbsp Extra virgin olive oil
1/2 cup Yellow onion (diced; about 1/2 medium sized)
1 tbsp Garlic (minced)
1 large Zucchini (sliced and quartered)
1 package (227g) Cremini (Italian) mushroom (sliced)
1 can (15oz) Cannellini beans, canned (drained and rinsed)
794 gm Crushed tomatoes canned (do not drain)
908 gm Chicken broth (stock), low sodium (or vegetable broth)
3 Tbsp Italian seasoning, no sodium added
256 gm Pasta, tortellini with cheese filling (refrigerated; or vegan/gluten-friendly alternative)
2 cup Spinach (packed fresh)
6 tbsp Parmesan cheese, shredded (or vegan parmesan)

Instructions


  1. Heat a frying pan over medium-high heat. Add the ground turkey and cook until no longer pink.
  2. Meanwhile, olive oil in a large stockpot and add diced onion. Saute until onions are beginning to soften; 3-4 minutes.
  3. Add the garlic, zucchini, and mushrooms to the stockpot and continue to saute until vegetables begin to soften; 3-4 minutes.
  4. Transfer the cooked ground turkey to the stockpot and add the drained and rinsed cannellini beans.
  5. Stir in the crushed tomatoes, chicken broth, Italian seasoning. Bring to a boil, cover, and reduce heat to low. Simmer for about 20 minutes.
  6. Add tortellini and spinach and simmer for about 5-10 minutes, or until pasta is tender.
  7. Garnish with a sprinkle of shredded Parmesan, 

Notes:

If vegan:

  • Omit the ground turkey and double up on the cannellini beans, or add an additional can of beans of your choice.
  • Replace the chicken stock with vegetable broth.
  • Swap out the Parmesan cheese for your favorite dairy-free alternative.

If gluten-free:

  • Use a gluten-free pasta option.
