Kale and Apple Bruschetta

6 small slice Ciabatta Bread (option to use gluten free)
2 tbsp Coconut oil
1 cup Cucumber (diced)
1 tbsp Extra virgin olive oil
1 cup Kale
1 whole lemon(s) Lemon juice
1 medium Red Apple
1/4 cup Red onion
1 pinch Sea salt
2 sprig Thyme, fresh
2 medium Tomato


Chop all the veggies and fruit into very small pieces.

Mix pieces into a bowl with the lemon juice, sea salt and fresh thyme.

Slice the bread, toast slices, and spread some coconut oil on them.

Slice each layer of bread diagonally to end up with some triangles.

Garnish the bread with the mix of veggies and eat right away.

Serve and enjoy!
