2 medium Egg (organic, free-range)
2 tbsp Water, filtered
1 tbsp Coconut oil
3 leaves Kale (washed, de-stemmed, chopped)
1/2 avocado(s) Avocado
1 slice Bread, sprouted, whole grain, Ezekiel 4:9
2 tbsp shredded Cheddar cheese, reduced fat (18%) (optional)

Instructions


In a small bowl, whisk eggs with filtered water. Melt the coconut oil in a pan over medium heat. Add kale and sauté for a minute. Add eggs and scramble until eggs are completely cooked, 4 to 5 minutes. Remove from heat.

Meanwhile, toast bread. Mash the avocado on the toast and top with kale scramble and season with salt and pepper. Sprinkle grated cheese on top.
