3 clove(s) Garlic (minced; to taste)
2 tbsp Lemon juice
3 tsp Capers, canned (including juice)
1 tsp Dijon mustard
1/2 tsp Sea Salt
1/4 cup Walnuts (soaked, optional)
1/3 cup Extra virgin olive oil (add more as needed)
2 bunch Curly kale (torn)
1 dash Black pepper
1 1/2 cup shredded Chicken, cooked
1 can (15oz) Chickpeas, canned, low sodium (drained and rinsed)

Instructions


  1. Add the garlic, lemon juice, capers, dijon mustard, sea salt, and walnuts to a food processor, or blender, and blend on high until smooth. 
  2. Add the olive oil and black pepper to the blended mixture and pulse to combine well.
  3. To assemble, place torn kale into a bowl. Dollop a few Tablespoons of dressing in the bowl and gently “massage” dressing into the kale with your hands, for about 3 or 4 minutes (to tenderize).
  4. Top with pre-cooked shredded chicken and chickpeas. Enjoy!






 

Notes:

Quick Tips:

  • Make vegan and vegetarian by omitting the chicken and adding more chickpeas.
  • Substitute walnuts for a sprinkling of nutritional yeast if you prefer.
  • For added crunch. Add a sprinkle of coconut bacon or roast the chickpeas before adding to the salad.
  • Serve with a side of soup or hummus and chips.
