This Kale Caesar Pasta Salad is made with tons of fresh kale and Romaine lettuce and tossed with lighter lime Caesar dressing.

(bow tie pasta or pasta of choice)

Greek yogurt, plain, fat-free
1/2 cup
Parmesan cheese, grated
4 tbsp
Lime juice (fresh)
1 tbsp
Olive Oil, Extra Virgin
(extra-virgin)
2 tsp
Anchovy paste
(to taste)
2 tsp
Worcestershire sauce
1 clove(s)
Garlic
(finely minced)

Dijon mustard
1/4 tsp
Salt

Black pepper
3 tbsp
Partly skimmed milk, 2% M.F.

Kale
(chopped fresh)
4 cup
Lettuce, romaine

(optional; halved)

Instructions
Prepare the pasta according to package directions. Strain and rinse cooked pasta under cold water and set aside.
Meanwhile, prepare the Lime Caesar Dressing. In a small mixing bowl, whisk together the greek yogurt, parmasean cheese, lime juice, olive oil, anchovy paste, Worcestershire sauce, garlic, Dijon, salt, and pepper. Gradually whisk in a spoonful of milk at a time until the dressing reaches your desired consistency.
In a large salad bowl, add the kale, Romaine lettuce, Parmesan, cherry tomatoes and cooked pasta.
Drizzle over the Lime Caesar Dressing and toss until combined.
Notes:
Anchovy paste is typically located in the seafood section of the grocery store.
