1 clove(s) Garlic (minced; for dressing)
1/2 tsp Dijon mustard (for dressing)
1 tsp Honey (for dressing)
2 tbsp Lemon juice (for dressing)
2 tbsp Extra virgin olive oil (for dressing)
1 pinch Sea Salt (for dressing)
1 dash Black pepper (for dressing)
2 cup Kale (chopped; can buy bag of pre-chopped kale at grocery store)
1 cup Chicken breast, boneless, skinless, grilled (pre-cooked store-bough strips or rotisserie)
1 cup Cherry Tomatoes (quartered)
2 medium tortilla(s) Whole wheat tortilla
1/2 cup Parmesan cheese, shredded

Instructions


  1. In a large mixing bowl, combine the garlic, Dijon mustard, honey, lemon juice, and olive oil. Whisk until you have formed a dressing. Season to taste with salt and pepper.
  2. Add the kale, chicken, cherry tomatoes, and half of the parmesan cheese. Toss to coat with the dressing. 
  3. To assemble, lay out the tortillas and evenly distribute the salad over top. Sprinkle the remaining parmesan over each tortilla, fold in the ends, and roll up.
