1 cup (dry) Farro
3 tbsp Extra virgin olive oil
1 tbsp Lemon juice
2 clove(s) Garlic (finely minced)
1 pinch Salt and pepper
2 cup Kale
1/4 cup Red onion (finely diced)
1/4 cup, crumbled Feta cheese


  1. Prepare farro according to package instructions. Set aside to cool for about 10 minutes.
  2. In a medium-sized bowl, whisk together the olive oil, lemon juice, garlic, and salt and pepper.
  3. Add the kale and massage the leaves with the dressing to soften. 
  4. Add the cooled farro, red onion, and feta to the kale and toss to combine.
