1 cup (dry) Farro
2 cup Kale
1/4 cup Red onion (finely diced)
1 tbsp Lemon juice
2 clove(s) Garlic (finely minced)
3 tbsp Extra virgin olive oil
1 pinch Salt and pepper
1/4 cup, crumbled Feta cheese

Instructions


Prepare farro according to package instructions.

In a medium sized bowl, whisk together the olive oil, lemon juice, garlic, and salt and pepper.

Add cooked farro, kale, and feta. Toss to combine.
