1. Cook the quinoa according to package directions.
2. Cook ahead of time or the night before and place in fridge to allow the quinoa time to get cold.
3. Make the salad dressing by mixing together the olive oil, lemon juice, vinegar, and vegan caesar. You can always use a different dressing if you prefer.
4. Mix the greens together in a large bowl. Add the dressing to the greens and toss well.
5. Dice up the cucumber, bell peppers, and tomatoes and add them to the salad.
6. Add the cold quinoa to the salad and mix everything together.
