Ingredients


1 cup Arugula
1/2 avocado(s) Avocado (diced)
5 leaf Basil, fresh (chopped for garnish)
1 cup Cauliflower (diced)
2 tbsp Dijon mustard (for dressing)
2 tbsp Extra virgin olive oil
1/3 cup Green onion, scallion, ramp
4 cup Kale
1/2 medium Lemon (juiced, for dressing)
1/4 tsp Salt and pepper (to taste, for dressing)
1 large fruit (6.4cm dia) Tangerine (mandarin), raw (peeled & sectioned)
1 large Tomato (sliced)

Instructions


For the salad, combine the kale, arugula, tangerine, tomato, cauliflower, scallions and avocado in a large bowl.

For the dressing, mix all of the ingredients together.

Toss the salad with the dressing, and garnish with rosemary or basil.
