Rinse and de-stem kale. Cut or tear leaves into strips.
Peel bananas and mix them in a large mixing bowl with cocoa and cinnamon.
Using a fork mash bananas and until a thick dark liquid remains. Some chunks are okay as they add nice texture to the chips.
Dump kale in bowl and massage for several minutes ensuring all leaves are evenly coated in banana mixture.
Flatten pieces onto trays for the dehydrator, around 5 trays will be needed.
Turn dehydrator on 140 and set timer for 3 hours.
After 3 hours, careully remove trays and flip kale chips.
Return the trays into racks and dehydrate for another 1/2 hour on 140 or until your desired texture is achieved.
