1/4 tsp Black pepper (Marinade)
1 cucumber(s) Cucumber (diced; Greek Salsa)
1 cup Cherry Tomatoes (sliced in half; Greek Salsa)
1/2 cup Red onion (diced; Greek Salsa)
1/3 cup Kalamata olives (Greek Salsa)
3 tbsp Olive Oil, Extra Virgin (Greek Salsa)
1 tbsp Red wine vinegar (Greek Salsa)
1 tsp Oregano, dried (Greek Salsa)
114 gm Feta cheese (Greek Salsa)
1 pinch Kosher salt (to taste; Greek Salsa)
227 gm Greek yogurt, plain, 2% M.F. (Tzatziki)
1/2 cucumber(s) Cucumber (grated; Tzatziki)
2 clove(s) Garlic (minced; Tzatziki)
1 whole lemon(s) Lemon peel (zest) (Tzatziki)
1 tbsp Lemon juice (Tzatziki)
2 tbsp Dill, fresh (or 1 tsp dried; Tzatziki)
1 dash Salt and pepper (to taste; Tzatziki)
3 cup Cauliflower crumbles/rice (optional)

Instructions


  1. Chicken: Cut the chicken into 1-inch (2 cm) cubes. Place in a sealable container with Marinade ingredients. Toss to coat. Let the chicken marinate for at least 30 minutes.
  2. Greek Salsa: Dice the cucumber, halve the tomatoes, and dice the onion. Place them into a medium bowl with the olives and toss with olive oil, vinegar, and oregano. Gently stir in the feta cheese. Taste for salt and add more if needed.
  3. Tzatziki: Combine the greek yogurt with the grated cucumber, minced garlic, lemon zest and juice, and dill in a medium bowl. Season with salt and pepper to your taste.
  4. Once the chicken has marinated heat a large skillet over medium-high heat. Add the chicken along with the marinade in a single layer. Cook 4 minutes per side or until each side is golden and the chicken is cooked through. Remove from pan and set aside.
  5. Add the cauliflower rice to the skillet, scraping up any stuck-on pieces of marinade from the bottom. Cook just until soft.
  6. To assemble divide the chicken and cauliflower rice between four containers. Layer in the salsa and top with Tzatziki. These bowls will keep for 4-5 days in the refrigerator.
