These salads are the perfect low carb lunch. You can make them on Sundays, portion them out and then just grab and go every morning on your way out the door!
Ingredients
1/4 cup
Bacon
(crumbled)
1 large egg
Egg, hard boiled
1/4 cup
Cherry Tomatoes
1/2 avocado(s)
Avocado
1 cup
Arugula
1 cup
Lettuce, spring mix (mesclun)
(Trader Joes Organic Ranch Dressings or your favorite Keto Salad Dressing)
1 tbsp
Ranch salad dressing, gluten free

Instructions
Prepare Toppings: dice the tomatoes, Bake or pan-fry crispy bacon, Hard boil eggs. Don’t cut up your avocado until you are ready to eat.
Set out as many meal prep containers as you intend to prepare.
In each container portion out: 2 Cups Arugula and lettuce mix, 1/4 cup Cherry tomatoes, 1/4 cup Bacon crumbles, and 1 hard boiled egg.
When you are ready to eat top with half an avocado and 1 Tablespoon Ranch dressing.
